
Ingredients:
225gm plain flour
4 eggs
110gm butter
150ml water
pinch of salt
150gm Suffolk Gold*
50gm Blanched Wild garlic
Method:
Boil water, salt, butter add flour and beat throughly.
Rest mix for 10 minutes then gradually add eggs until the mixture is glossy.
Add chopped suffolk gold and wild garlic.
The mix should be rested for at least 1 hour before use.
The mix can be spooned into frying oil at 170-180c for about 3-4 mins until golden brown.
Serve with dressed salad.
